TUSCAN PORK CHOPS

4 boneless pork loin chops

8 oz whole grain fettuccini

1 Roma tomato, chopped

2 Tbsp. light olive oil

1 Tbsp Balsamic vinegar

1 tsp dry Italian Seasoning

2 garlic cloves, chopped

4 lg fresh basil leaves

Dash of salt and pepper

 

Season pork chops with salt and pepper.  Heat oil in skillet over medium heat.  Add pork chops (or grill) and cook 12-15 minutes, turning once half-way through cooking.  Cook until no longer pink and thermometer reads 160 degrees F.

 

At the same time, cook and drain pasta as directed on package.  Pour pasta onto serving platter and arrange chops atop pasta.

 

Stir vinegar in hot skillet.  Add remaining oil, Italian Seasoning, garlic and tomato.  Cook just enough to heat through.  Pour over chops and pasta.  Garnish with fresh basil leaves.
