Fish and Seafood Recipes


Grilled Fish Tacos

1 tbsp olive oil

4 limes, halved & divided

5 cloves garlic, minced & divided

2 tsp ground cumin, divided

1 ½ lb swordfish or tuna

1 ripe avocado, peeled & diced

¼ red onion, minced

2 jalapenos, seeded & minced

2 tbsp fresh cilantro, chopped

8 6-in flour tortillas

8 lettuce leaves

Preheat grill to med.  Combine olive oil, juice of 3 limes, 4 garlic cloves & 1 tsp cumin into shallow bowl.  Add fish and marinate 15-30 min at room temp, turning once.

In separate bowl, stir remaining lime juice, garlic & cumin w/avocado, jalapenos, cilantro and onion.  Cook marinated fish for 5 min on each side.  Let cool slightly before cutting into strips.  Grill tortillas for 30 seconds on each side.

Place 2 tortillas on each plate.  Layer each with lettuce leaf, grilled fish slices and avocado “salsa.”

Seafood Pasta Salad

8 oz bow tie (or other “fun”) whole grain pasta

8 oz cooked crab meat

8 oz cooked shrimp, chopped or use “baby” shrimp

2 carrot, peeled and chopped

2 celery stalks, sliced

2 tomatoes, diced

½ c. low fat Italian dressing

2 lemons, halved

½ tsp ground pepper

2 heads romaine lettuce

Prepare pasta according to directions.  Rinse and drain. 

Combing crab meat, shrimp, carrot, celery, tomato, dressing, lemon juice and pepper in large mixing bowl.  Add cooked pasta and toss.  Divide lettuce and top with pasta mixture.

Serves 4
